Ice machine configurations explained

Ice-making head (modular)
The freezing system and condenser sit on top of a separate bin or dispenser. Heads cover the widest range of capacities and let you pair production with exactly the storage you need.
Self-contained unit
Ice maker and storage bin in one cabinet. Common under bars and counters and in smaller kitchens; capacities are usually lower than modular heads.
Remote condensing unit
The condenser is mounted outdoors or on the roof and connected by refrigerant lines. It keeps heat and fan noise out of the kitchen and suits high-capacity installations.
Batch vs. continuous
Batch machines freeze and harvest cube ice in cycles. Continuous machines use an auger to produce flake or nugget ice without stopping and turn nearly all of their water into ice.

How to size an ice machine

Ratings are measured at 90 °F air and 70 °F water, so real production in a hot kitchen will be lower. Estimate your peak-day ice use, then add about 20–25% headroom.

Reading ice machine energy and water numbers

Energy use is reported in kWh per 100 lb of ice and water use in gallons per 100 lb. Multiply by your daily production to estimate consumption. Because 100 lb of ice contains about 12 gallons of water, any water use above 12 gal/100 lb is purge water used to flush minerals from batch machines.

Sanitation and water treatment

Ice is food, and an ice machine is a wet, dark environment where slime and mold can grow. Clean and sanitize the machine at least every six months, filter the incoming water, change filter cartridges on schedule, and keep the condenser clean so the machine does not overheat.

Why does my ice machine make less ice than its rating?

Ratings are measured at 90 °F room air and 70 °F supply water. Higher temperatures, a dirty condenser, a clogged water filter or scale on the evaporator all reduce production.

How often should a commercial ice machine be cleaned?

At least every six months, and more often in hard-water areas or in bakeries and breweries. Use only the manufacturer-approved cleaner and sanitizer.

Are water-cooled ice machines ENERGY STAR certified?

ENERGY STAR certification for commercial ice makers covers air-cooled machines, including self-contained, ice-making-head and remote-condensing units. Water-cooled models, which use large volumes of condenser water, are not part of the program.
