Solid doors insulate better and use less energy; glass doors let staff see stock without opening the cabinet.

Hot-holding food safety

  • Keep hot food at 135 °F (57 °C) or above (FDA Food Code).
  • Load only food that is already hot. Reheat cooled food to 165 °F (74 °C) within 2 hours before holding.
  • Check food temperatures with a calibrated probe thermometer at least every 2 hours and record them.
  • Clean and sanitize racks, pans and food-contact surfaces daily.

Reading holding-cabinet energy data

The idle energy rate (W) is the power a cabinet needs to hold its interior at temperature while empty, measured under the ASTM F2140 test. ENERGY STAR sets a maximum that scales with interior volume, so dividing the idle rate by volume (W per cu. ft.) is the fairest way to compare cabinets of different sizes. Well-insulated cabinets with solid doors typically post the lowest figures.

How long can food stay in a holding cabinet?

Food kept at 135 °F or above remains safe under the FDA Food Code, but quality declines over time. Set product-specific holding times and discard items that exceed them.

Why is my holding cabinet food drying out?

Usually the set point is too high, the food is uncovered or it is held too long. Cover moist foods, lower the set point while keeping food above 135 °F, and use humidity if the cabinet has it.

Do insulated holding cabinets really save energy?

Yes. Better insulation and tight door seals reduce the heat lost through the walls, which is what the idle energy rate measures. ENERGY STAR cabinets must stay under a volume-based idle limit.
