About the UNOX XEF*-06EU-E***-

This guide covers the UNOX XEF*-06EU-E***-, a 6-pan full-size electric convection oven listed as ENERGY STAR certified. It is classed as a countertop or stand-mounted unit and holds 6 full-size steam (hotel) pans or 6 full-size sheet pans.

A convection oven uses a fan to circulate hot air around the food, which cooks faster and more evenly than a static oven and allows lower set temperatures. It is the standard choice for baking, roasting and reheating in most food-service kitchens.

Under the ASTM test methods used for ENERGY STAR, it achieved a convection-mode cooking efficiency of 80% and a production capacity of 106 lb of food per hour in convection mode. Its convection-mode efficiency is higher than 73% of the 46 Electric Convection ovens in our database.

Safety information

  • Connect the oven to an electrical supply matching the nameplate voltage and phase and sized for its 10.3 kW input, installed by a licensed electrician with a means of disconnect. Switch off and lock out power before servicing.
  • Install the oven under an exhaust hood where required by your mechanical code and fire authority, and keep flue openings and vents clear.
  • Use dry oven mitts. Never load pans of hot liquid above eye level, where they can spill onto you when removed.

Installation and first-time setup

Commercial ovens must be installed by qualified electrical professionals according to the manufacturer's instructions and local codes. Dimensions and weights are not part of the certification data; take them from the specification sheet.

  1. Plan clearances and placement

Position the oven with the clearances to combustible and noncombustible construction shown on the data plate and in the installation manual, leaving room to open the door fully and to service the controls. Countertop models must sit on a stand or counter rated for their weight; stacked units must use the manufacturer's stacking kit.

  2. Level the oven

Level the oven front to back and side to side. An out-of-level oven bakes unevenly and can affect door sealing.

  3. Connect power

Have an electrician run a dedicated circuit sized for the 10.3 kW rated input at the nameplate voltage and phase. Commercial electric ovens are typically hard-wired at 208, 240 or 480 V, single- or three-phase.

  4. Burn off and calibrate

Before cooking, run the empty oven at a high setting for the time the manufacturer recommends to burn off protective oils, with the hood running. Then check the actual cavity temperature against the set point with an oven thermometer.

Using your oven

Preheating

In ENERGY STAR testing this oven preheated in about 3.3 minutes in convection mode. Always preheat fully before loading; putting food into a cold cavity lengthens cook times and gives uneven results. Avoid preheating hours before service — turn the oven on only as early as your first bake requires.

Cooking with convection

  • When adapting recipes written for a conventional oven, start about 25 °F (15 °C) lower and check doneness early.
  • Use the fan-low or pulse setting, if available, for light batters and meringues that can be disturbed by strong airflow.
  • Leave at least one rack position between loaded pans so air can circulate evenly.

Loading pans

  • Capacity is 6 full-size steam (hotel) pans or 6 full-size sheet pans.
  • Use pans that fit the oven's rack spacing and do not block the fan baffle or air channels.
  • Load all shelves of a batch at once and close the door quickly to minimize heat loss.
  • Under the standard test, the oven cooked about 106 lb of food per hour in convection mode. Planning batches around full loads uses energy most efficiently.

Food-safety temperatures

Based on the FDA Food Code. Verify with a calibrated probe thermometer.
FoodMinimum internal temperature
Poultry, stuffed foods and reheated leftovers for hot holding165 °F (74 °C)
Ground beef, pork and other ground meats155 °F (68 °C) for 17 seconds
Whole cuts of beef, pork, lamb; fish and seafood145 °F (63 °C) for 15 seconds
Hot holding after cooking135 °F (57 °C) or above

Managing idle time

Between batches this oven draws about 1.26 kW in convection mode. Turn it down or off during long gaps between meal periods, and use any programmable shutdown or standby feature.

Care and maintenance

WhenWhat to do
DailyRemove racks and wipe the cavity once cool; clean spills before they carbonize. Wipe the door gasket and glass.
WeeklyRemove and clean racks, shelf supports and the fan guard; check the door gasket for cracks and the door for proper closing.
MonthlyClean the cooling-air intake filter for the controls (if fitted) and check the core probe and its cable for damage.
QuarterlyCheck cavity temperature against the set point with an oven thermometer and have the controls recalibrated if they drift.
AnnuallyHave a qualified technician inspect heating elements, contactors, fan motor and electrical connections.

Troubleshooting

Work through these checks before calling for service. Allow the oven to cool before inspecting the cavity, fan or door.

ProblemPossible causeWhat to try
Food cooks unevenlyOven not level; pans blocking airflow; overloading; fan or element/burner fault.Level the oven; space pans and avoid oversized pans; reduce load size; call service if one area is always cold.
Long preheat or slow recoveryDoor gasket leaking; door opened frequently; failing element or burner; low gas pressure or wrong voltage.Inspect the gasket; limit door openings; have a technician check heat output and supply.
Temperature does not match the set pointSensor or control out of calibration; hood drawing too much heat; door not sealing.Verify with an oven thermometer; have the control recalibrated; check the door and gasket.
Smoke or burning odorGrease or food residue in the cavity; first use after installation.Clean the cavity and racks; complete the burn-off procedure on new ovens with ventilation running.
Error or service code on the displayA sensor, ignition, water or fan fault detected by the controller.Note the code and consult the code table in your manufacturer's manual before resetting; repeat codes need a service technician.
Oven does not heatBreaker tripped; high-limit thermostat tripped; failed element or contactor.Reset the breaker once; if it trips again or the oven still does not heat, call a technician.

Energy use and running costs

Cooking energy efficiency is the share of the energy consumed that ends up in the food during a standardized ASTM cooking test. At 80%, the UNOX XEF*-06EU-E***- delivers 80 Btu to the food for every 100 Btu it uses.

Idling costs about $0.21 per hour at $0.17/kWh. If the oven sits hot but idle for 6 hours a day (7.56 kWh) and is preheated once daily, 365 days a year, standby and preheat energy alone come to roughly $531 per year — before any food is cooked.

Its idle energy rate is lower than 27% of the 46 Electric Convection ovens in our database.

Actual costs depend on menu, batch sizes, operating hours and how long the oven is left idling. Turning ovens off between meal periods is the simplest way to cut their energy use.
